Cruz’s relationship to the vaccine is complicated. He says he’s vaccinated. He added in May that the jab “has given us a lot of freedom.” And Ted Cruz loves freedom! However, he’s simultaneously argued against proposed government vaccine mandates, describing them as “authoritarianism.” Though some local restrictions will prevent unvaccinated players from entering arenas in certain cities, such as the Barclays Center and Madison Square Garden in New York and the Chase Center in San Francisco, the NBA has imposed no such mandate. The league’s rules only indicate that unvaccinated players, who are restricted from certain social activities such as dining with teammates, are likely to have less fun on the road than their vaccinated teammates.
What’s the source, then, of Cruz’s vocal support for players who are refusing a vaccine that no one is mandating they get, that he himself has received, and that he has heralded for bringing Americans more freedom? It’s all about owning the libs. Cruz, a staunch opponent of abortion, ended his tweet with the longtime pro-choice mantra “your body, your choice.” “Standing with” the players who’ve chosen not to get vaccinated—or who won’t confirm they have been—by repurposing a catchphrase used by his political opponents is unlikely to get the NBA to change its relatively light policies around unvaccinated players. But failure to score actual points has never stopped the senator from trying to dunk on his opponents.

That was a six-point drop from the last time Gallup asked that question—back in 1975. And that dip mostly came from one side of the country’s partisan lines. While 79 percent of Democrats had strong faith in science, just 45 percent of Republicans shared the sentiment, down 27 points from 1975.
Biden’s GOP predecessor, Donald Trump, was often dismissive of top scientific minds, and he lagged behind other presidents when it came to naming his own science and technology advisory panel, a group first created by President Eisenhower after Russia’s launch of the Sputnik satellite in 1957. PCAST has been a key sounding board and study group for nearly all presidents ever since. (Richard Nixon is another Republican exception; he actually abolished a version of the council.) Trump didn’t name his science and tech advisers until October 2019—thirty-three months into his presidency. Writing for the FixGov blog of the nonpartisan Brookings Institution, academics Marc Hetherington and Johnathan Ladd concluded last year that Trump “has gutted scientific expertise and administrative capacity in the executive branch. ” Trump also, infamously, suggested that injecting disinfectants into the body might be one way of treating or preventing coronavirus infections.

But even those who don’t side with Trump have balked at some of the government’s top scientific minds as the pandemic has gone on, frustrated at the changing guidance on lockdowns, masks, and disease transmission from experts at the CDC and the National Institutes of Health. Adams sees that shifting advice as less a failure, though, than the way science works. “It’s just that it’s a complicated problem, and we didn’t have much data,” he said. “People were having to make their best guesses based on really skimpy data. But over time, the truth comes out.”
That’s exactly what Biden has promised when he pledged to “follow the science” on the campaign trail and continued the mantra into his presidency. Even so, Biden has garnered criticism lately for getting ahead of the science, especially with his push to get booster vaccine shots to all Americans—something the Centers for Disease Control has not endorsed.
That’s not a concern for Adams or for William Press, a 73-year-old astrophysicist and computational biology expert at the University of Texas at Austin who was also appointed to PCAST by Biden. (Lisa Su, the Austin-based CEO of AMD, a Santa Clara, California, maker of computer processors and software, is also on the council but was not available for comment.) Both Adams and Press express confidence that the president means what he says when he says he trusts in scientists. “Every administration is different, and it’s up to the president how he wants to use his science advisor and his PCAST,” Press said. “I think it’s too early to know the answer with President Biden on PCAST. But we clearly see science as important in his decision-making.”

Press has worked with Biden before. A former deputy director of Los Alamos National Laboratory, Press was the vice chair of Barack Obama’s council of science and tech advisors from 2009 to 2016. That panel met with Obama and Biden more than two dozen times and completed 36 reports on topics ranging from drinking water safety to using technology to foster social connections among older Americans. (Trump’s council met four times, and he is not recorded as having attended any of its meetings.) Press recalls that Obama usually left the meetings exactly 45 minutes after they began, but Biden would stay behind. “He’d say, ‘Do you have some extra time? I have some questions I’d like to ask you,’” Press said.
Biden has touted his science and tech advisory panel as the most diverse in history and has given it specific tasks, including coming up with ways to prevent future pandemics, exploring solutions to climate change that directly lead to economic growth, using technology and science to best China, and sharing benefits produced by technology and science more equitably.
Those complex challenges, though, might seem easy compared with the panel’s unofficial task of rebuilding some of the confidence in science and scientists that both the pandemic and politics have eroded—a task Press believes has serious economic implications. “I think we’ll see an outflow of the economic benefits of technology from the United States to elsewhere in the world and specifically to China,” he said. “There’s no guarantee that we will stay preeminent in the world.”
Press has made groundbreaking discoveries about black holes, galaxies, and supernovas, and authored books that form the building blocks of knowledge for students learning how to use numbers to solve problems. “I’m very concerned with this general drift in the U.S. and the world away from fact-based decision-making,” he said.
Texas has had its own topsy-turvy relationship with science of late. Governor Greg Abbott has welcomed and celebrated high-tech companies, from Elon Musk’s SpaceX in Boca Chica to Oracle in Austin, but he’s also spurned some scientific advice during the pandemic. Abbott reopened the state and dropped the mask mandate in March without consulting all of his chosen medical advisers, some of whom opposed the decision. Biden described Abbott’s decision as “Neanderthal thinking.”
Adams wouldn’t discuss the state’s stance on science, and Press declined to get into specifics about the governor’s handling of the pandemic. (Understandable, considering they are employees of state-funded universities.) But Press did say that he’s been dismayed at how politics, particularly the recent six-week abortion ban and election bill, seem to negatively affect Texas’s opportunities for improving its technology and higher education sectors. When he moved to Texas in 2007 it was in part because he believed the state held its universities, burgeoning tech industry, and business in a high-enough regard that it wouldn’t let politics get in the way. Now he’s not so sure. “Texas politics has always been tough,” he said. “But this is politics potentially killing the golden goose. ”

Homemade Chinese Noodles are not as difficult to make as you’d think. True, you’d have to put in time and effort, but the result is well worth the investment.
In light of the upcoming Chinese New Year (2021 is the Year of the Ox, if you want to know), let’s learn to make Chinese noodles… from scratch.
Yup, you heard right.
Why? Why bother with Homemade Chinese Noodles? I can hear you from a mile away, you unfaithful person you! Why?! Because Homemade Chinese Noodles are some of the best things in life, that’s why.
Why are Homemade Chinese Noodles so good?
- First, as you begin to slurp them, you’ll notice how satisfyingly silky and smooth they feel.
- Then, as you start chewing, they feel somewhat firm and springy. And chewy. Not unlike al dente pasta, but with more elasticity. It’s quite the juxtaposition of textures.
- There’s that unmistakable pretzel-like aroma that hits you, too, as soon as you start picking them up with your fork or chopsticks. It’s all part of the allure of Chinese noodles.
- Finally, as always with homemade foods, they’re fresh, free from preservatives, and you can control the amount of sodium.
In short, I’d like to say… forget dry noodles. Or those packaged instant noodles. Homemade noodles are superior, case closed.
Besides, there’s nothing to be afraid of. All it takes is just a pasta roller/machine and a few everyday ingredients, such as flour, salt, water, and/or eggs.
Plus this.
I have lye water and I’m not afraid to use it. That’s my new mantra.
What is lye water and why do you need it to make Chinese Noodles?
Lye water, sometimes also called lime water, or kansui, is an alkaline solution used to give many types of food their characteristic aroma, flavor and texture.
For instance, and this is just a very short list, lye is used to cure olives to remove their bitterness, added in the brine for century eggs to render the yolks soft and creamy, and the white parts transparent. In pretzels, hard or soft, prior to baking, they’re dipped in a lye solution to give them their distinctive crust and taste.
There are also other types of lye used in non-cooking applications but we‘re only interested, in this case, in food-grade lye. Specifically, how it affects Chinese noodles.
Lye water is what gives Chinese noodles their chewy and springy characteristics. It’s the essential ingredient that makes Chinese noodles different from fresh pasta.
What if I don’t have or can’t find lye water?
Fear not. I’ve done the homework for you. You can substitute lye water with baking soda.
Baking soda, however, is a weak alkaline. In order to transform its strength closer to lye water, you first need to bake it.
To bake baking soda, line a sheet pan with aluminum foil, spread baking soda on it, and bake it in a 250° – 300°F oven for about 1 – 2 hours.
I experimented with 200g of baking soda, baked it at 250° F, and after 1 1/2 hours, I ended up with 154g. So it lost about 1/4 of its original weight, not as much as the 1/3 that this NYTimes article suggested. Still, I did get a pretty good result with the noodles I made with it. They were not as chewy or elastic as the noodles with lye water, but they were very close.
Step-by-step method of making Homemade Chinese Noodles
- In a large bowl, mix flour, water or eggs + water, salt, and lye water. The dough will be shaggy and dry. Cover the bowl with a lid or plastic wrap and let it sit for 30 minutes.
- Gather the dough and knead to form a ball. It will be slightly crumbly but as long as it can form a ball, it’ll be okay. If the dough is too hard to knead, you can rest it again for another 30 minutes.
- Using a rolling pin, flatten the dough into a disk, then divide into 3 portions.
- Working with 1 portion at a time, feed the dough through the widest setting of your pasta roller. It will look patchy and dry at first, but don’t worry.
- After a series of folding and rolling, eventually the dough sheet will become smooth. Continue to roll, progressively feeding it through a narrower setting each time, until you get to the desired thickness. I like medium thickness (#4 on my pasta machine) for Lo Mein noodles, slightly thinner (#5) for ramen noodles, and even thinner (#6) for Chinese-style fettuccine.
- Once you reach the thickness you’re after, run it through the cutting attachment.

Homemade Chinese Noodles are not as difficult to make as you’d think. The time and effort you put into making them are well worth it.

Ingredients
- 2 cups bread flour
- ½ cup water or 2 eggs + enough water to make ½ cup
- ½ teaspoon salt
- 1 teaspoon lye water or baked baking soda
- A spray bottle filled with water
Instructions
- Put flour in a large bowl.
- In a measuring cup filled with the water, stir and dissolve salt, then add lye water or baked baking soda. Alternately, if using eggs, beat eggs in the cup and add enough water to make ½ cup, then add lye water.
- Pour liquid into flour, stir with a fork, cover bowl, and let it rest for 30 minutes.
- After 30 minutes, knead dough into a ball. Rest for another 30 minutes if dough is too crumbly and hard to knead. You can mist it with a spray bottle to soften it.
- Flatten dough into a disk with a rolling pin, then divide into 3 equal portions.
- Working with 1 portion at a time, feed dough into pasta roller, using the widest setting.
- Fold dough in half or third and roll again. Do this for several times until the dough becomes smooth. Dust with flour, as needed, to keep it from sticking to the pasta roller. Or spray with water if it’s too dry.
- Progressively feed the dough into narrower setting until the desired thickness is achieved.
- (Optional) If the dough sheet is ragged on its edge, you can trim it with a pizza cutter.
- When the desired thickness is achieved, dust the dough sheet lightly with flour, then feed it through the cutting attachment.
- Finally, dust the noodles with a little bit of flour or corn starch to prevent them from sticking to each other.
- Your noodles are now ready to use. If you want to use them at another time, coil them into nests, place them in a plastic container, and store them in the freezer.
- To cook them, bring water to a hard rolling boil, boil noodles for 1 minute, stirring with a fork to keep them separated. Drain.

Tips & Tricks
- Can you make Chinese noodles without a pasta machine/roller? Sure you can, but it’s a lot harder to get even strands of noodles since you’ll have to roll and cut the dough by hand. If you decide to give it a go, make a softer dough by adding 2 – 3 more tablespoons of water, roll a portion into a large oblong, fold it accordion-style, then cut into the desired width with a knife.
- Flour suitable for these noodles is wheat flour, either bread or all-purpose flour. Whole wheat flour, in my experiment, produced coarse and less chewy noodles. It also needed more water and was harder to roll. The best-tasting noodles were made with bread flour.
- These Homemade Chinese Noodles can be frozen for later use. Storing them in the refrigerator, however, can result in oxidization, giving them a greenish, grayish tint. It didn’t seem to affect the taste of the noodles, but I wouldn’t advise storing them in the fridge for longer than 2 – 3 days. The noodles in the top container were frozen, while the ones in the bottom container were stored in the refrigerator.
- If the dough is too dry and you have a hard time kneading it, use a spray bottle to lightly mist it instead of adding spoonfuls of water.
- If the dough is too wet, dust it with more flour as you go. It’s not an exact science, so don’t be afraid of messing up the ratio. The dough is forgiving. Whatever noodles you get will likely be much better than those dry packaged noodles, so forge ahead.

Travel to the village of Kyn.From Grebeshkov along Dolgiy Meadow

In the vicinity of the village of Kyn there are many picturesque places on the Chusovaya River. Today I invite readers to take a walk to the Grebeshka rocks and the former village of Dolgiy Lug. We will not only admire the beauty of the Great River Gorge, meadows and majestic rocks, but also learn a little about the history of the people who once lived here. When Chusovaya is not bound by ice, you can negotiate with the locals about a boat trip from the Kynovskaya pier to the Stenovoi soldier.
It will be possible to return to Kyn on foot through the stunning Dolgy Meadow, picturesque Grebeshki and Babenki farm, because it is better to walk and see than to drive by. A real decoration of Chusovaya are the Grebeshki rocks, located a kilometer from the Kynovskaya pier downstream, to the northeast on the outskirts of the village of Kyn.

These are “waterproof” shoes – as much as it has spilled, so much has poured out, but your feet will relieve fatigue after a refreshing procedure.Tourists, “armed” with water access, expand their opportunities for travel along the Ural rivers along and across.
When you walk along the oxbow, it is interesting to watch the old channel, as herons fly over it in an arc. Kites circling high above the river, waiting for the appearance of a large fish on the Kriushinsky search. It is noteworthy that the ducks in the fall over Chusovaya at high speed diligently repeat all its bends on an extremely low-level flight, without cutting directly and keeping in mind the hunters when flying.Squadrons of ducks and a kite’s vertical dive in attack are a sight worthy of any air show. Long Meadow
Long Meadow – really long. A mountain meadow on the eastern slope of Plakun-Gora is two kilometers long along Chusovaya and one kilometer wide, with a copse in the middle in the tract with the funny name Petushata.
The name of the meadow is old, for example, there is Dolgy Meadow on the Volga in the Yaroslavl region.In general, the names on Chusovaya are beautiful and at the same time simple and laconic. For example, the first settlers in front of the Maksimov stone on Chusovaya were thinking, thinking, how to name a new village? And after all, as they called it – the Motherland!
Indeed, when you climb the immense Long Meadow, it takes your breath away from the height, beauty and vastness! “My dear country is wide …” It is as if everything that makes our Russia strong and beautiful is brought together here! The sky is just a stone’s throw away, the clouds are floating nearby, the sky stretches to the horizon over the blue mountain ranges.Below – the river Chusovaya runs, silvery water in the wind, it is visible from Kyn and to the bend of the Stenovoi soldier. The right bank is decorated with solemn slender spruce trees and ends with a picturesque white-stone spur.
A meadow of incredible width shimmers with all the colors of flowers and goes somewhere high and far, merging with the blue dome of heaven. My God! The famous Windows screensaver just pales in comparison to the yellow storm on the waves of the buttercup. Glazed, in a word.
Here it is just right to do “contemplative tourism”, there is one.Mushrooms are not looking for mushrooms either. Looking around a little, you will notice how someone’s cow grazes lonely higher in the meadow, where it has not yet overgrown with a buttercup. It is as if a small gray horse, unnoticed by her, runs across the meadow into the nearest forest. This is not a “horse”, but an ordinary Kynovsky wolf! According to the stories of Valentina Efimovna, who lives and works nearby at the Kynovskaya meteorological station, in one of the fierce winters, wolves attacked houses on the outskirts. Her husband had to shoot back, killing the leader of the pack, who was already flying in a jump.Valentina Efimovna was shocked by the magnificence and size of the huge wolf. In an open space, unless in a hungry winter, you can walk calmly.
Village Dolgy Meadow
It turned out that Long Meadow is not just a beautiful place. Passing along the meadow road, I noticed a post from the gate and blackened logs of the hut. Nearby, in a nettle, I accidentally found an old cast-iron weight with a stamp, once cast at the Kynovsky plant. In 1770, the village of Dolgiy Lug appeared here.
Old Believers settled here, including the same “… Kerzhak Avdeyka Arapov, he had a large, rich farm …” it will be led by the Bolsheviks. In order to “re-educate” the sophisticated minds of the creators of the GULAG came up with the idea of massively “acquainting” strong peasants and townspeople-intellectuals with the beauties of the Solovetsky Islands and the beauties of Chusovaya. So in 1930, on the site of the village of Verkhnyaya Chizma, the village of Moskvichi arose (that’s where they were brought!), And 80 families of Kuban Cossacks were brought to the village of Sulem, etc.In the same year, a settlement of special settlers appeared on Dolgiy Luga. The disenfranchised half-prisoners worked in felling, survived in cold barracks without stoves, “reformed”.
The village has not disappeared since the 1950s, and the road, which its inhabitants diligently paved with stones, still exists and leads from Grebeshkov down to the Chusovaya bank, as if to a pier. On a flat bank, a house with a bathhouse of the last local resident – grandfather Shchukar – stands alone. In recent years, because of his health, he came here only in the summer, let the raftsmen spend the night in a bathhouse (which is a rarity in the Kerzhak region – to let a stranger into the house to stay).I was fishing for pike, of course, and his surname was suitable – Shchukin. The residents of Dolgiy Lug were employed at the Kynovsky plant in the construction of kolomenok ships and in the delivery of ore. Such was the merchant’s pier at the Sen’kin stone from the 18th century, located down the Chusovaya from Nizhniy Selo. Along with the “merchants”, the number of Chus’ quays will be greater! There was no reason for the Shuvalovs to launch the barges of the Lysva plant on a long and dangerous path through the soldiers Gorchak and the Robber, when there was a possibility of a shorter route with the dispatch of a caravan from the mouth of Lysva and below.
Apparently, the pier in the village of Kamasino, mentioned by Mamin-Sibiryak, could also be, since the Shuvalovs carried out the transfer of ore from the Koivinsky mines in this place, in winter they delivered ore on horses on the ice, in summer – on shitiks (small ships with a sail).
Moreover, above Ust-Koiva at the mouth of the Rassolnaya river, below the Ore Log, there really was a Rassolnaya dock-shipyard with a dam and a raft, built in the middle of the 18th century for the needs of the Kusy plant, to supply Ust-Koiva with barges and to send ore.
How many quays on Chusovaya were there, including the “little-known” ones?
In fact, “the devil is all in the details”! The number of quays for sending iron and cast iron should not include not only merchants, but also quays built by breeders for internal production needs: shipyards for the construction and haul of barges, mine quays for sending ore. Shipyards (Kamenskaya, Ilimskaya and Rassolnaya near Ust-Koiva), as well as mine piers (Babenskaya in Kynu and a pier in the village of Kamasino) – must be taken into account separately.

The mantra about some influence of the extraction of brine shrimp on the medicinal properties of the natural complex of Lake Medvezhye has been repeated by the officials of the Kurgan region for more than a year, and it seems that they have convinced the governor of this.
