Seven years ago, Ed and Deb Tanguay started Marsh Mill Ranch venison processing. They’ve been busy every fall since.
Each year, the Kirkville business takes in an average of 350 to 400 deer from hunters during the bow, regular firearm and muzzleloader seasons.
Like other venison processors across Central New York, they handle the usual cuts of venison for roasts, steaks, stew meat, cube steaks, hamburgers — along with making specialty items such as sausages, hamburgers with pork or venison jerky. The Tanguays employ three other meat cutters, and bring in in-laws to help out when things are really busy.
“We trim out any bloody or spoiled meat,” Ed Tanguay said. “Our motto is ‘Venison Processing With Pride.’ If we wouldn’t eat it, we won’t give it back to the hunter.”
Tanguay took a break recently from cutting up deer to talk about the business.
It says on your Web site that you’re a “U.S.D.A. custom-exempt processor.” What does that mean?
That means we can process meat of farm-raised animals or deer for individuals, which is not for resale.
What should every hunter know or do before bringing their deer to you?
Have their tags properly filled out and signed. And of course, the deer should be properly field dressed. Sometimes people leave their deer hanging for too long at home before bringing it in. Depending on the outside temperature, that could end up spoiling the meat. We recommend bringing it in as soon as possible. Some say the deer has to hang for a couple of days to age the meat. How much do you charge?

How do you prevent mixing up one hunter’s venison with another?

Clemson splits double header at Syracuse, 4-2, 6-7; Winning streak snapped at 19-games
SYRACUSE, N.Y. (Clemson SID) – Marissa Guimbarda’s 12th home run of the season in the top of the fifth inning proved to be the difference in game No.
1 of Saturday’s doubleheader between the Clemson Softball team (39-4, 28-4 ACC) and Syracuse (19-22, 11-19 ACC). The Tigers went on to defeat the Orange by a final score 4-2 at Skytop Softball Stadium and – in the process – recorded their nineteenth consecutive victory, which tied the Clemson record for the sixth-longest winning streak by any team in school history.
Clemson freshman starting lefty Millie Thompson (8-1) earned the win in the circle for the Tigers after holding the Orange to just two runs in 5.0 innings pitched. Thompson tallied five strikeouts and held Sryacuse to just four hits and two walks. Freshman Regan Spencer earned her first career save after entering in relief of Thompson to start the sixth. Thompson faced just one batter above the minimum on one walk. Syracuse’s Lindsey Hendrix (3-3) suffered the loss and was relieved in the fifth after giving up the home run to Guimbarda and Hyatt’s RBI-double.

The RBI was Logoleo’s 18th of the season. After Valerie Cagle reached on an error, Guimbarda went first-pitch swinging on her long ball to kick start a three-run fifth inning for the Tigers.

SYRACUSE, N.Y. (Clemson SID) — The Clemson Softball team’s 19-game winning streak came to an end on Saturday afternoon at the hands of the Syracuse Orange (20-22, 12-19 ACC), who took the second game of Saturday’s doubleheader in walk-off fashion by a score of 7-6. The loss marked the first time the Tigers, now 39-5 overall and 28-5 in ACC play, have ever lost when scoring five or more runs, and dropped them to 41-1 all-time in such games. Game 1 Recap
Despite going 3-for-4 at the plate with two home runs and five RBI, starting pitcher Valerie Cagle (25-4) suffered just her fourth loss of the season. Syracuse pitcher Alexa Romero earned the win and moved to 8-9 on the campaign.
Clemson’s Marissa Guimbarda carried her momentum from game one into the first inning of game two, when her sacrifice fly plated McKenzie Clark for the first run of the game.
Syracuse responded with a four-run second inning, but Cagle erased the Tigers’ deficit with one swing of the bat, a three-run shot to right field, which knotted the game at four apiece in the top of the third.
In the bottom of the frame, Syracuse regained the lead after a wild pitch allowed the Syracuse runner on third to score. However, Cagle once again refused to let the Orange lead stand, as she hit yet another homer, her 14th of the season, in the top of the fifth on a line drive over the left-center field wall.
After a scoreless sixth inning, two one-out singles set the stage for Cagle yet again, who yet again came through for the Tigers. Cagle sliced an RBI-single down the left-field line to score Clark and give Clemson a 6-5 lead.
Capitalizing on an infield hit, an error, and a fielder’s choice that did not result in a single out, the Orange loaded the bases in the bottom of the seventh inning. Cagle struck out the following batter, but Geana Torres’ single up the middle scored both the tying and winning runs as the Tigers lost their first game since March 26 against Duke.
Up next, the Tigers round out their 2021 regular-season campaign against Syracuse on Sunday at noon, which is slated to stream on ACCNX. A Clemson win or tie against the Orange on Sunday would clinch the ACC regular-season title for the Tigers as would a Florida State (38-9-1, 26-5-1 ACC) loss at Pitt in Sunday’s regular-season finale for the Seminoles.
Syracuse forward Oshae Brissett gains momentum at NBA Draft Combine
Tyus Battle entered the 2019 NBA Draft process having already undergone evaluation one year before. He declared his Syracuse Orange career finished after three seasons. He departed as one of the great scorers and clutch finishers in program history, and he quickly signed with Roc Nation to begin his professional career.
Battle and Oshae Brissett represent two vastly different prospects. Brissett tested the NBA waters in spite of an inconsistent sophomore season where he struggled to integrate the three into his game. He left the door open, and maintains the option to return to the Orange.
Yet he propelled ahead of Battle at the G-League Elite Camp, reached the NBA Draft Combine, and appears on the cusp of getting selected — if he remains in the draft.

In Brissett, teams project a 20-year-old wing with size could shoot well enough to play the modern four position. He did not thrive in that position for Syracuse in 2018-19, where he said his offensive role changed. The potential he flashed in less than a week at the combine intrigued teams anyway about his potential for growth and success in a different system.
The 70 games Battle and Brissett paired up for at SU reflect how little the college tape matters when the balls roll onto the floor at the combine. — is evident. For the rest of the international pool of talent, scrimmages reveal what players that are used to massive minutes and plenty of shot can provide in short bursts.
Brissett joined 10 other prospects from the G-League camp — all voted on by NBA teams — including Miami’s Dewan Hernandez who missed the entire 2018-19 season with eligibility concerns. Brian Bowen and Darius Bazley both entered the combine without a college game played.
Brissett threw down a vicious dunk and finished in transition in the combine’s scrimmages, but he transcended from what could be drawn from his Syracuse film through his involvement in passing sequences. He twice distributed the ball from the baseline, and remained active underneath to finish one of his best plays.
Lots to dissect in this possession, starting with more troublesome on ball D from Nowell, losing Weatherspoon. Oshae Brissett makes an excellent pass from the baseline to the wing, and Weatherspoon finishes the possession attacking a closeout and dumping off to Brissett.

It’s even more impressive considering these are random teams that he is not used to performing with. He shot 4-for-7 with 13 points and a pair of three-pointers in the final day of the combine.
Brissett is currently working with One Legacy Sports in Phoenix during the draft process, which for the first time allowed NBA prospects to hire agents and still remain NCAA-eligible. While he said he’ll wait until the May 29 deadline to decide if he will return to SU, his inclusion among the top-60 prospects in the combine, combined with an impressive scrimmage, projects well to him finding a team that will select him on June 20.
As Jonathan Givony noted, scrimmage performance played a role in Kevin Huerter, Josh Okogie and others rising up NBA Draft boards into the middle of the first round.
Brissett’s possible selection would follow a season where he did not appear in any mock drafts.
Adam Zagoria reported that Brissett, in Phoenix (where his agency is headquartered), worked out for the Nets, Rockets, Thunder and 76ers with more expected to follow the combine. He quoted a NBA scout that said, “as long as he understands who he is, I think he’ll have a shot, especially with his size,” but thought he should return to Syracuse.
Battle’s decision to return to SU a year ago followed a far less triumphant combine showing. It also exhibited the risk of not striking while the iron is hot. At the G-League combine, he shot 1-for-3 with four points in a scrimmage, and failed to make the NBA Combine again.

In the end, the Brady wound up not saying anything juicy while sitting courtside with Julian Edelman while the New England Patriots receiver used the opportunity to chirp “he’s coming back” with his quarterback next to him.
Like most Brady-related news over the past couple of months, there was a lot of reaction but little substance. It was just some guys enjoying a basketball game. That, on the other hand, raises the question: How did that crew wind up at that game?
According to Syracuse.com, it was the work of local businessman Adam Weitsman, who has a track record of inviting celebrities to watch the Orange play. Weitsman, the CEO of recycling company Upstate Shredding, joined WEEI Wednesday to explain how he got Brady to Upstate New York.
Weitsman, who had never met Edelman or Fallon, said he reached out to Brady and eventually set up the visit to support some local charities — and create a special visit for one of the most decorated coaches in college basketball history.
“The Syracuse basketball coach, Jim Boeheim, is my closest guy friend and he lives and breathes Tom Brady,” Weightman said, via WEEI. Tom and I basically in New York City, where we live — there’s some commonality on where he both live, so I talked to Tom and Tom invited those guys up.”
“… Coach Boeheim is a pretty miserable guy, but he always smiles when he talks about Tom Brady,” Weitsman added. “I thought it would be cool for Tom Brady to come up, and it worked out great. They came up for a little while. They flew in and we had a good time. They are great guys. They had no security. They came up to see the game and they went home.”
The 75-year-old Boeheim has coached Syracuse since 1976 and ranks second all-time in victories among college coaches. He was inducted into the Naismith Basketball Hall of Fame in 2005.
Fortunately for Boeheim, Weitsman brought in a star player who’s used to dealing with curmudgeonly coaches with long track records of success.
Syracuse rolls into the Sweet 16

The Orange on Saturday looked once again like a No. 1 seed. They made shots, defended, passed the ball and, for the final 20 minutes, outrebounded Big 12-tough Kansas State.
“We proved a lot of people wrong,” sophomore Dion Waiters said. “I know they are scratching their head now.”
During an upset-ravaged opening weekend, Syracuse strolled into the Sweet 16 with a 75-59 victory over No. 8 seed Kansas State on Saturday in an East Region third-round game at Consol Energy Center.

Syracuse (33-2), written off as a prime national title contender after 7-foot center Fab Melo was declared ineligible, will meet Wisconsin (26-9) in a Sweet 16 game Thursday in Boston.
“Some people will try to bring us down,” said forward James Southerland, who scored 15 points in the balanced attack.
“It’s not a secret. We know what’s going on out there. All we have is each other at the end of the day, and that’s what we count on.”
Syracuse posted its most lopsided win in five weeks, showing the quick-spurt offense and disruptive zone defense that had the Big East regular-season champion No. 1 for most of the winter.
The Orange shot 66 percent in the second half, turning a 25-24 halftime lead into a rare low-seed cake walk in this year’s crazy March Madness.
“We made shots,” coach Jim Boeheim said. “We haven’t done that lately.”
Kansas State (22-11), playing without senior forward Jamar Samuels, who was declared ineligible hours before the game, stuck around despite shooting 8 for 34 in the first half. Wildcats leading scorer Rodney McGruder (15 points) was hampered with a sprained ankle for most of the game, and 6-11 forward Jordan Henriquez (14 points, 17 rebounds) was in second-half foul trouble.

“Let me get that straight now. Syracuse is minus a very good player, too. They are good because they’ve got a helluva coach, and their players, they play the game the right way.”
Syracuse, which will join Pitt in the ACC as early as 2013-14, used a 20-2 first-half run and a 17-4 second-half spurt to regain some of its early-season swagger.
“This is the way I like us to play,” senior forward Kris Joseph said. “That’s how we are supposed to play.”
Senior guard Scoop Jardine (16 points, eight assists) was more blunt.
“We won the game,” he said. “It don’t matter if we played good or bad. We won and advanced. That’s what this tournament is about.”
Syracuse’s main weakness — rebounding — was exposed again. Kansas State had 15 offensive rebounds in the first half and led the boards, 28-16, at the break. But Syracuse outrebounded Kansas State, 16-13, in the second half.
“We have to rebound more and we’ll be good,” said freshman center Rakeem Christmas, who had eight points and a career-high 11 rebounds.
“Everything else just falls into place.”
Wisconsin ranked in the middle of the Big Ten in rebounding margin this season and 83rd in the nation.
Syracuse’s players are tired of hearing everyone write them off.
“We didn’t win games by accident,” Jardine said. “We all win games together.”

Pitt rallies to defeat Syracuse in road ACC showdown
A week ago, Pitt coach Jeff Capel had more players coughing, sniffling and sneezing at practice than he had healthy bodies.
When he finally got most of the group together Saturday, Pitt was forced to practice in three groups. Social distancing might work at the grocery store, but try it while preparing to play college basketball.
Yet, Pitt found a way to pull off an improbable upset Wednesday at the Carrier Dome, rallying from 18 down in the first half, 14 at halftime and 12 with seven minutes left to defeat Syracuse, 63-60.
The 32-18 halftime deficit was the largest overcome by a Pitt team playing on the road. The 53-41 disadvantage was the biggest that turned into a victory in the final seven minutes in school history — home or away.
Don’t forget the most significant storyline: Capel had only nine scholarship players available, with John Hugley, Nike Sibande and Noah Collier home under covid-19 restrictions and Justin Champagnie, the team’s best player and the ACC’s leading rebounder, out with a knee injury.
“We showed a lot of fight. We showed a lot of grit. We showed a lot of toughness, and we were resilient,” Capel said.
The victory raised Pitt’s record to 6-2 (2-1 in the ACC), and it was the Panthers’ third without a loss on the road. Syracuse scored the game’s first 11 points but only seven in the final seven minutes.
Pitt’s defense, a strength through the season’s first eight games, held the ACC’s No. 1 scoring team to 23 points under its 83.7 average.
“They slipped up. They stopped playing for a second,” Pitt junior Xavier Johnson said. “They turned it off and on in the second half.”
Pitt also dominated the boards 49-33, including 20 offensive rebounds. That’s another aspect of the game Capel continually preaches, and players finally are heeding.
It also plays into a third Capel demand. He wants his players to fight under all circumstances.
“We tried to establish in our program that we’re going to fight,” he said. “When I thought of Pittsburgh basketball before I came here, when they were really good, it was the toughness. It was the fight.”
Junior Au’Diese Toney, whose tip-in with 8 seconds left gave Pitt its first lead, understands what Capel means.
“We’re trying to get this program back to how it was in the Big East days,” said Toney, who was 11 years old when Pitt won its last Big East championship.
The victory was similar to the Northwestern game last month. Pitt never led until the end of both games and came out of the locker room to score 49 and 45 points in the second halves of both.
With four minutes left and Pitt down five, Capel gathered his team around him and asked, “What does this remind you of? This is Northwestern all over again, and we’re going to win because we’ve been in that situation before and (the Orange) haven’t.
“You could feel the momentum changing.”
With a depleted bench, Pitt got contributions from several players. Ithiel Horton was the scoring leader with 14 points on four 3-pointers. Johnson, who surpassed 1,000 career points (1,010), and Toney added 12 each. Johnson added seven assists and three steals.
Freshman Femi Odukale scored 10 and senior Terrell Brown eight, including a dunk with 2 minutes, 33 seconds left that cut Syracuse’s lead to 57-54.
Johnson took it from there.
He struggled with foul trouble, a season-long battle, and missed 11 of his first 13 shots.
But when he had the ball outside the 3-point arc with 1:52 left, he quickly arched a shot over the Syracuse defense and through the cords to tie the score.
“All I was thinking about was winning,” he said. “The next shot was going in.”
After Toney’s tip, Pitt again turned up the defensive intensity. Syracuse couldn’t find an open man, and Johnson gobbled up the errant pass, was fouled and hit two to set the final margin.
The Panthers were forced to battle the covid pandemic, plus a tough opponent that had won six of its first seven games and looked to be on its way to a seventh — all while trying to change the culture of the Pitt program.
“You have to get off the mat, man,” Capel said. “That’s life.”
