I always thought: where did this name come from – knyshiki. And recently I found out: Ashkenazi Jews have such rolls, they are called KNISH. Thin chopped or pulled dough, buckwheat filling with goose rinds and fried onions or mashed potatoes.
And grandma made little puff pastries with minced potatoes.And mom – with sauerkraut. Funny, round and very tasty pies.

For the test.

500 g flour
1 egg
1/2 cup cold water
200 g butter
a pinch of salt
a spoonful of lemon juice or vinegar

Preparation.

2. Divide the dough into 8 pieces, roll each piece into a ball and refrigerate for at least 2 hours.

Potato filling.

1.Peel potatoes (10 pieces) and boil until tender. Drain the water and dry the potatoes a little over low heat.

2. Chop 1 large onion finely and fry until golden brown in 2 tablespoons of vegetable oil.

3. Add the onion and butter to the potatoes and mash. Season the puree with salt and black pepper. Refrigerate mashed potatoes.

Cabbage filling.

1. Squeeze the sauerkraut (1 kg) from the brine. Finely chop 1 large onion.

2. Fry the cabbage and onions in vegetable oil. Refrigerate.

Knyshik preparation.

1. Put 1 ball of dough on a board and roll it out as thin as possible into an oval sheet, 25-30 cm long and 20 cm wide. Put the filling (potatoes or cabbage) in the form of a roller, stepping back a little from the edge. The diameter of the filling is 5-7 centimeters.

2. Roll the roll.

3. Pinch one of the open ends of the roll. Then, stepping back from the closed edge of 7 centimeters, saw off with the edge of your palm, cut off a piece from the roller (your palm should act as if it were a knife).

To prepare the knishies in advance, you can proceed as follows:
bake them almost until tender, without browning, cool, tighten with cling film and directly on the sheet and refrigerate. And before serving, put a sheet with knysh in an oven preheated to 180 C and warm up for 15 minutes.
