Some Things That Should Keep In Mind When Purchasing The Best Cheddar Cheese
In this part, I give you some guides that you should consider when making decisions on buying cheddar cheese.
Ingredients
The first factor you need to consider is the ingredients, whether they are made from pure cheese or not. Furthermore, you should choose cheese products made from cow’s milk that do not contain growth hormones to avoid harmful health risks. You should also buy cheeses that are free or low in additives, colorants, and gluten.
Nutrition
The nutrition facts of a product are usually printed on the package. You should be interested in calcium, protein, and calcium content. You can also choose products that do not contain sugar or trans fats or look for products for dieting people.
Food Compatibility
In order to buy a suitable cheese, you should also consider what kind of food you want to eat. For example, if you want to make bacon or baked goods, choose cheeses that are highly heat resistant so that they won’t burn. If you want to use cheese as sauces, you can buy one with a good melt and no crumbs.
Form Of Cheese
Cheese in thin slices or shredded form will be convenient to use, saving preparation time. However, they often contain preservatives to prevent clumping.
With block cheese, although you will have to cut it into thin slices or melt it to add to dishes, it usually costs less than pre-cut cheese and contains fewer additives.
Moreover, you can choose straws cheese to add to sauces or fruits easily. It also tastes very good.
Size
The size of the cheese is also a factor need to think. Furthermore, you can choose the size of cheese based on the serving size for adults or children. In addition, it is depending on the frequency of using to choose the appropriate size. You should not store cheese for too long at home as its freshness will decrease or lose its flavor.

Loyola Goes Top Cheddar From 70 Yards: SportsCenter #1!
When I first heard about the 70-yard Loyola goal from their ECAC Championship win over Fairfield, I figured it had to be off a 10-man ride or off a broken ride, but now that I’ve seen the video it’s clear that this was just an old fashioned 70 yard sidearm rip shot!
Update: The original clip we embedded from The Lacrosse Network in this post has been removed from YouTube. We have since replaced it with the one below…

Here’s another angle:
999 times out of 1000 the goalie makes the save here, but in the instance above we were treated to a weird meeting of potentialities where the sun, a scrum in front of the cage right before the ball arrived, and one heck of long pole rip combined for one of the sweetest lacrosse goals ever.
Most people couldn’t hit the cage from 70 yards, let alone score, and that makes this the goal of the year. It’s better than this one… at least in my book!

So far these two efforts HAVE to be the best two goals of the year… so which one do YOU prefer? Let us know which goal was better in the comments section below!
90,000 BISCUITS WITH CHEDDER CHEESE AND NUTS
Hello!
Comments come to me with a big delay or do not come at all, I apologize for not responding on time!
Perhaps this is one of the most successful recipes for cheese cookies! And it is done very simply and quickly, and the dough can be stored in the refrigerator for several days and tolerates freezing well 🙂 Well, it’s very, very tasty!
The original recipe, as well as a video on marthastewart.com, thanks to Anya for translation – cookingpleasure !
30 pieces
4 oz (120 g) cheddar cheese, grate
1 stick (113 g) butter at room temperature
1 cup (115 g) flour
1 tsp.l. salt
pinch cayenne pepper
30 halves of pecans
2 eggs, beat lightly
paprika
Put cheese, butter, flour, salt and pepper in a food processor and stir until
until smooth (about 10 seconds).
Remove the dough and divide it into 2 pieces.
Roll each part into a cylinder, 4 cm in diameter,
wrap in parchment and put in the refrigerator for 2 hours or leave overnight.
Preheat oven to 180 degrees.Line two baking sheets with parchment.
Remove the dough from the refrigerator and cut into 0.5-0.6 cm thick circles.
Place them on a baking sheet at a distance of 4-5 cm from each other.
Gently place a pecan on each bite and press lightly.
Brush the cookies with an egg and sprinkle with paprika.
Bake for 15 minutes.
Cool for 5 minutes, then transfer to a serving platter.
Serve hot or at room temperature.
I did not grease the cookies with an egg, did not add salt, I used 125 g cheese, 100 g butter, 125 g wheat flour and about 1/4 tsp.l. baking powder. In a blender bowl, I first chopped the cheese, and then added the rest of the ingredients and mixed in a pulse mode. How to form cylinders from dough can be seen in the video at the link above, I have an option with almonds on the top photos and instead of paprika, the cookies are sprinkled with salt and dried herbs. I baked it on the top shelf of the oven and the almond biscuits were ready in my oven in 10-11 minutes. I cut the cylinders into circles about 1 cm thick and got 22 pieces.
I did the same with pecan and paprika, from paprika it was of such an interesting color and baked much faster, after 7-8 minutes I took it out of the oven.
We could not decide what we liked better, very tasty and so and so 🙂 Especially wonderful warm biscuits with cold wine)

Apples on a branch. Variety – Red Windsor. If anyone doubts, then red – because the colors of this, and not because it is somehow connected with communism. When dealing with apple pies, remember that almost any variety can be used
Apple pies are probably one of the simplest (if not show off) and most delicious desserts. I promised to tell you about them separately and in detail, and here is the result.
First there are a couple of classic options, and then all sorts of freaks. Honestly and immediately I admit that I did not cook everything, but I want to try.
Let’s start with the famous Delia Smith’s recipe. Her cooking is simple and does not require the highest kitchen aerobatics. True, there may be problems with specific varieties of apples, but take what you have. It is good if the general apple characteristics are respected, but even if not, this is not a tragedy.

Classic tall apple pie.True, there is only one variety of apples in the background, but don’t let that stop you: in the cut, you can clearly see both the pieces and the apple porridge. Cheddar, to be honest, is not required, but tasty
- 75 g of cheddar (you need a type of cheese that would melt and bake well, but in its natural form would not be too sticky)
- 225 g flour
- 50 g softened butter
- 50 g of lard (or 100 g of butter at once. I cooked this cake several times, but it seems that I never had a lard in my house)

Large, hard, rather sour and absolutely irreplaceable in cooking. The price, as you can see, is not too scary, a kilogram is cheaper than one ride on the London Underground from the outskirts to the center
- 900 g of Brumley apples (sour, turn into porridge during cooking)
- 900 g of Coke apples (hard, like pieces of iron, you just can’t bite, they knit your mouth, they don’t lose their shape even in the hottest environment). In general, the general idea is that one variety of apples should turn into something like a puree, in which pieces of apples of a different variety will come across that have not fallen apart.Imagine a road surface made of concrete with pebbles, and everything will immediately become clear to you
- 1 tablespoon without the top of semolina (I put crushed almonds, it turns out almost the same)
- 75 g of fine confectionery sugar (any will do)

Apple orchard in Kent. Apples are grown and harvested mainly in three counties: Kent, Worcestershire and Herefordshire. Therefore, since it is impossible to endlessly stuff you with pictures of pies and apples, I will intersperse them with landscapes from the scene. We were walking through Kent one fall. The path marked on the map ran right through the apple orchards. The harvest was already harvested, but some apples remained on the branches. And at the beginning of each row of trees were empty plastic bags. Like, take as much as you want. It is probably unnecessary to say that two people who grew up in a Soviet deficit could not pass by … And they not only took with them, but also ate a lot …
- 12 whole carnation buds (a carnation in apple pies is very in English. If you don’t like it, but you need to get used to it, then add cinnamon, it is in a perfect marriage with apples)
- One large egg, but only for gloss, you can do it

These hop dryers are as Kent’s trademark as the chalk cliffs of Dover. Now, however, hops are no longer dried in them, but they live, having converted a historic agricultural building into a fashionable residence. In one word: conversion!
We have already gone through all this many times: we grind butter and flour with sugar with our handles, or butter plus lard and flour with sugar. It will be scary to stick, but with your hands it is really faster, besides, at the end of the process, all this should turn into a pile of crumbs. Add cheddar and a little water there (try quantities, flour is different). The finished dough feels like a lump of clay, although not in color. Wrap it in some kind of plastic and put it in the refrigerator for at least half an hour.
With apples, everything is simple: peel, cut out the core, cut as God wants you to, but not too large, the easiest way is to chunks, toss them into a bowl and mix until the varieties completely interpenetrate. To prevent them from darkening in the open air, you must either pour over them with lemon juice, or clean and cut them at the very last moment.
Forgive me if I repeat myself (and I repeat myself), but the main difficulty of this pie is its bottom. It must be completely baked, otherwise the contents will fall out at the slightest attempt to cut the cake.

It should look something like this. Here is a pie, however, with a braid (it is a lattice made of dough), but the height and general ideas are correct
My method is completely wrong, but it works for me: first bake the bottom, and only then “build on” the sides of raw dough. It turns out almost perfect, just try to properly press the edges to the bottom.
I readily believe that you do not have such problems. In this case, take a form with split sides, lay it out with paper.Roll out two-thirds of the dough to such a size that the resulting pancake covers the bottom, edges and hangs slightly.
Sprinkle the bottom with semolina or crushed almonds. Now just lay out the apple mixture in layers, alternating each with sugar and cloves. The trick here is to pack the layers more tightly, like the carbon atoms in a diamond structure. Of course, you can not be zealous, but the result will be less marketable. This will also be quite edible, so decide for yourself how important aesthetics are to you.

Farm in Kent. But not oats, not cherries or hops. Wind turbines, and all of them in bulk will be called a “wind farm”. Agree that it looks very beautiful against the background of multi-colored fields. Well, environmentally friendly, of course
Roll out the remaining dough and cover the apples with it, pressing the edges with your fingers. They (edges, not fingers) can be lubricated with water in advance, they will stick better. Roll the rolling pin around the edge. This method tightly seals the lid to the walls, and from the scraps you can build some leaves and sprinkle on top.Lubricate the lid with a beaten egg, poke a hole in it for steam to escape (it should be at least a centimeter in diameter so that the steam comes out freely and cheerfully).

Places in Kent (as well as in other counties) are simply magical. Judging by the picture, this is already quite late autumn. Apples have been harvested for a long time, but if anything, you can buy them in the supermarket. Les Bucksley Wood
This masterpiece should be baked at two temperatures: first, about 10 minutes at 220 degrees (or 200, if your oven is off scale), and then another 40-50 minutes – at 190-180.In theory, the cake will be ready when the lid is pleasantly golden. In general, take a look. When ready, let it stand for 10 minutes and only then carefully pull it out of the mold. You can eat about 20 minutes after baking, or a little later.
According to the rules, you can eat with liquid or whipped cream, custard or ice cream. That’s it, I can’t write more about him, my mouth was filled with saliva, and my nose – with olfactory memories. I hope you understand everything, move on to the next number.

Leaflets and shading around the edges (it turns out if you carefully walk along the edge with the teeth of a fork) are not required, but it is better to make a hole. The most important thing (for me, a lazy one) is that it has no bottom, so you shouldn’t be afraid that something won’t bake there
If we assume that each of us (if we love to cook) has our favorite culinary author, then mine is Mary Berry. This love originated at the moment when it dawned on me that her recipes did not cause my inner protest, I was ready to follow her recommendations without growling with anger, grinding my teeth and throwing a cookbook (or tablet) on the floor. At the same time, they are so elegant that the replacement of one component for another happens as if by itself.
While a popular amateur pastry chef show called “Big British Pastry” was still on the BBC, Mary was one of the judges and endowed the nation with the ingenious expression “leaking ass”, in a more politically correct translation “wet bottom “.This is what I got in the previous apple pie.

Trail in Kent for hikers. It is better not to go behind the wire. And not because an evil private owner sits there with a couple of hungry wolfhounds, but because there is almost immediately a cliff, those washed-out chalk cliffs and a steep flight to sea level …
- 675 (700-750) apples for cooking ( Antonovka, probably), peel, core and cut into rather thick slices
- 50-75 g of fine confectionery sugar, depending on whether you got sweet apples or not, and in general, whether you like sweets
- 4 buds cloves (exclude, if that)
It was the filling, and now dough
- 175-200 g flour
- 50-75 butter
- 50-75 g margarine (you can either only margarine, or only butter, all three options work)

Also an option: just poke the lid with a fork (two blows – eight holes) so that the steam comes out, but it does not come out so efficiently. However, make the holes you like best
No special shape is required for this cake. You need a relatively flat ceramic bowl with not very high edges. Here it is called a Pie dish, that is, a bowl for pies.
Then everything is simply amazing. Spread half of the apples over the bottom, sprinkle with sugar. Arrange the cloves here and there (or sprinkle with cinnamon) and lay out the rest of the apples. Pour about three tablespoons of cold water into them.
With the dough, everything is as usual: grind the fat with flour and add cold water to get another clay-like lump.

Roll out this business will not be too easy, although you can place the dough between two layers of cling film and roll out like filling for a sandwich.
Cover the apples with the resulting lid, press the edges well and refrigerate for about half an hour.It is possible for an hour, or even for the night.
Punch a hole (s) in the lid and bake in a preheated (optional) oven at 180 degrees for 40-45 minutes. If the dough starts to brown dangerously, cover the top with baking paper.

Apple pie with salted caramel
Photo author, Getty Images
Photo caption,
Here the pie maker clearly did not philosophize too much and just poured a piece of caramel sauce. It seems to be quite reasonable. I suppose you could just put a bowl of sauce on the table and let everyone dip their spoons and pies into it!
I will not give you the recipe for how to properly prepare salty caramel sauce (or caramel sauce with salt).Firstly, the Internet is full of them, and secondly, sugar is terribly capricious and fast. Having ditched a couple of pots, I swore to bother with him, and in case of urgent need I buy ready-made sauce.
The recipe below belongs to a lady who goes by the nickname “brown-eyed baker” named Michelle.
- About 350 g flour
- 2 teaspoons of granulated sugar (as for me, it is not enough, but brown-eyed bakers know better)
- 1 teaspoon of salt (quiet horror!)
- 270-280 g butter
- and some then (as appropriate) the amount of cold water

Caramel sauce.Yes, there are a lot of dishes and their ingredients, which are much tastier if you cook them yourself. Caramel, it seems to me, is not one of them. But my opinion shouldn’t stop you at all
- Caramel sauce with salt. I do not know how much, decide depending on your food preferences. According to my feelings, there should be enough of it to work in the corps de ballet, but not crawl out to the fore. We have apple pie after all.
- 5 hard and crunchy apples. The size? Which one will come across. If it is not enough, then you can add.

The same apples of the Cox variety I mentioned earlier. You can immediately see from them that you just can’t bite!
- 150 ml lemon juice … It says so. I would limit myself to one lemon, but I don’t insist, because I just don’t know. (Lemon juice is needed solely so that peeled and cut apples do not darken. By the way, you can either cook them in advance, or peel and cut at the very last moment.I usually don’t use lemon)
- 130-140 g sugar
- 3 tablespoons flour
- 1 teaspoon cinnamon
- For a few other spices like nutmeg, but you can stick with cinnamon. She’s always enough for me.
And if someone also needs glaze , then it needs
- 3 eggs, lightly beaten with a fork
- 1 teaspoon of sugar

Perfectly executed lattice! You can also braid pigtails from the dough, or cut and put as it turns out
With the dough, everything is the same.Whether you stir it by hand or pulse it in a food processor is up to you. Divide the result into two relatively even balls, wrap in plastic wrap and refrigerate. It can stay there from two hours to three days. If you are a highly organized individual, you can take care of Sunday lunch on Friday.
I describe the further process exactly as in the author’s. To be honest, some of these manipulations seem to me completely unnecessary, which does not mean at all that they are not needed.

Either a small pond, or a large puddle in a Kent field. Such a small group of trees sticking out in the middle of a field, usually on a hill, is called a copse, or grove. Exactly so, in a diminutive form, because this vegetation still does not pull on the grove. At first, this name was very confusing to me: copse is a grove, and corpse is a corpse. The difference is only one letter, and they are pronounced very similarly
So, after two hours (or three days), take one lump out of the refrigerator, roll it out and carefully place it in a baking dish so that the dough covers the edges and hangs a little …Press your fingers against the walls and return to the refrigerator for at least half an hour.
Take out the second portion of the dough, roll it out again, but now cut into strips, because, according to the author’s intention, the top of the pie should not be covered with a solid, but as if with a grate. You probably know how to do it without me. My grandmother, for example, made all sweet pies this way, and whether you will lay out your grate at 90 degrees, 45 degrees, or completely arbitrarily, that’s at your discretion.
Spread out the strips for the future wire rack on parchment paper and place them in the refrigerator for the first portion of the dough so that it doesn’t get bored.

Another apple (it seems, paradise) on a branch. But this is Worcestershire. I still have problems with the paradise variety: mainly, I am annoyed by the core, from which there is no escape!
While they are chilling, make the filling. Put all the apples in a bowl, pour them thoroughly with lemon juice, shake so that it penetrates wherever possible, then discard them in a colander.Just in case: it is better to peel and cut apples at the very last moment. Or just put them out in advance, which is even easier.
Combine all loose filling ingredients and mix well with apples.
Now it remains, in fact, to “build” the pie. Remove the dough bottom and edges from the refrigerator. Put a third of the apple mixture on the bottom and pour in a third of the caramel sauce, repeat the process twice more, draw a grate from the strips and, according to the author’s advice, put it in the freezer for another half hour.

While the cake is freezing, heat the oven to 180 degrees. Now give him a classic bath procedure: from the icy cold to the fiery womb. Bake for about 30 minutes, until the edges begin to change color to brown. Here you can either wave your hand and continue, or, if they just get a Mediterranean tan in front of your eyes, cover them with baking paper, or even foil, and continue the process for another 25-35 minutes until the entire surface turns golden.
If you put the filling already ready, then the whole process is reduced to half an hour. I would do that.
Remove, let the cake cool on the wire rack and eat with whatever you want. Probably, you can make it with chocolate instead of caramel sauce. In general, let your imagination go free.
Apple crumble pie in a frying pan

Half-cake, half-crumble. Or just a pie, but with a crumble (or crumbled?) Top.Nothing is simpler
This idea, in general, is not new, and more than once I had to eat in more or less traditional teahouses such pastries, which in the lower part is a pie, and in the upper part there is a typical crumble.
A frying pan is needed here exclusively of cast iron, so that it can be safely put into the stove. The result is the aesthetics of a simple suburban cottage. It is desirable that the window overlooks some of the Scottish mountains with sheep roaming the slopes. If you accidentally have a long plaid skirt lying around in the corner of your closet, you can wear it to complete the picture.
But let’s get down to business:

I can not guarantee that this is just a crumble pie, or just a crumble, but the cast-iron frying pan, apples and cinnamon are in place, but in a bowl clearly a custard in which the small black dots are vanilla grains. That is, everything is according to the rules
How you will make your next shortbread dough is up to you. You can either skip the sugar altogether or add it. You can make cheddar dough. You can take it ready-made.Just in case, here is another option:
- 225 g flour
- 100 g butter
- pinch of salt
- cold water (if necessary, pour in gradually so as not to make a mud puddle on the table)
This is the basis, so say, a foundation on which you can “build” anything you want.

A very picturesque ruined Worcestershire shed. On the right – like thickets of blackberries. It looks like there is some kind of fruit tree behind it…
- 6 apples (I already said that what will be, will be as much. Ideally, the same mixture as for the first recipe: one is for cooking, the second is sweet and crunchy)
- 2 tablespoons of flour (crushed almonds actually taste better. , maybe white, I personally don’t notice much difference in taste)
- A pinch of salt (I never put it, but the overwhelming majority of culinary authors insist on it)
You can add raisins, or some kind of jam.For example, I like either raspberries or orange marmalade (purchased).

I love paths over which trees and branches form like a tunnel. In the English countryside, they are quite common, the most colorful we came across on the Isle of Wight. But since I in no way pretend that I saw them all, then, most likely, somewhere much more “tunnel” options come across. This path leads from Bredon Hill in Worcestershire
For top crumble
- 130-140 g flour
- 65-70 g sugar
- 30 g brown sugar (do not worry, put either only brown or only white, or a mixture in any proportion.Don’t believe anyone who says that changing the color of the sugar will change the taste of the product so that you don’t recognize it)
- 2 teaspoons of cinnamon (considering that we have already stuffed cinnamon in the filling, you can neglect it in crumble. Sometimes I have fun the fact that I mix it with some aromatic essence. I have already tried lemon, orange, almond, and at the moment of a short-term insanity – a banana. In general, I do not recommend a banana, the rest is whatever you want.
- Half a teaspoon of salt (I have a question : How are all these authors doing with blood pressure?)
- 180 g of oil.
General considerations about crumble (top crumb): of course, no one forbids you to accurately measure the quantities. But with the same success, you can just throw flour, butter, sugar into a food processor, grind and see what happens. If a dough is formed, then add either flour or sugar, if it is completely dry powder, then add more butter.
as always, much easier than describing it all. Make the shortbread dough in the same way. You don’t even need to roll it out, just flatten it with your fingers on the bottom of the pan.Its additional (frying pan) charm lies in the fact that it is not necessary to dance ritual dances around the form and build up the sides. The frying pan has edges, the finished pie is picked right out of it, so you don’t have to think that the dessert should have a marketable appearance even after you take it out of the mold. In short, they spread it flat and sent it to the refrigerator for the same half hour, or a little longer.
Apples are the same. Peel, chop, mix with zest, brown sugar and salt if you are using it.

With crumble, we repeat the process of making the lower part of the dough, but do not add water, leaving it in the form of large and small lumps.
Now put the apples on the bottom of a frying pan covered with dough, sprinkle with crumbs and bake at 200-210 degrees for 30-35 minutes.

Worcestershire landscapes can be pretty wild, well, actually very relatively wild, given the number of paths leading to the top of Malvern Hill …
You can even beat the whole recipe and remember only that there will be dough below, then some kind of filling, and on top – crumb. Once I did such a savory version. The filling was potatoes with cheese cubes and green onions. Judging by the reaction of the family, it was good!
Finally…
A few general notes: apple pie can be made with any dough, but for the English entourage you need a shortbread in any version – with or without cheese, with or without an egg, with water or milk, sweet or unleavened, everything is up to you taste. It is desirable, but not required.
The other day I still have a yeast dough after making a cabbage pie. I decided to make something apple out of it, but it turned out that there was only one apple in the house. I had to build a filling from one apple, a handful of walnuts, half a can of purchased marmalade, a teaspoon of orange essence and about a couple of tablespoons of ready-made candied fruits. The yeast dough went down, then the filling, and on the top there was the same crumble. The family remained pretty.

And the same Worcestershire, but domesticated. Arrow Valley Forest Park
You can also add raisins, lemon-orange candied fruits, cinnamon, nutmeg, cloves, walnuts, orange wedges, blackberries (very English version), and even cherries to the filling. The easiest way to make it is to put out apples and everything else, so that they give off excess water.I like to fry apples in general in butter.
In terms of form, which is easier. Crumble, or pie only with a lid, but without a bottom, is the simplest and, by the way, the most useful option, since the dough is half the size. It can be done with the bottom, and the lid is either solid or with a lattice.
Which cheese is best for pizza
One of the most amazing dishes of Italian cuisine, pizza impresses with a variety of recipes. The filling can be chosen literally for every taste, but one ingredient is present in any recipe. You can’t make pizza without cheese. Let’s talk about which cheese to choose for pizza so that it turns out appetizing in appearance, juicy and soft, like in a good pizzeria – order pizza, Kharkov.
Cheese for the first layer
Almost all recipes indicate that the pizza must be sprinkled with grated cheese on top of the filling. However, it is this approach that is often the cause of culinary failures. The fact is that an ordinary gas oven is not very suitable for baking pizza, since the temperature in it cannot rise above 250-280 ° C.In order for the dough to bake, but the cheese does not have time to dry, a temperature of 350-400 ° C is needed, which is achieved in a classic stone oven. The pizza is placed there for only a few minutes, during which it is fully cooked.
A much better result in home-made pizza is obtained when the cheese is placed on the dough in two layers: the first immediately after the tomato paste, and the second on top, as usual. An important detail: for the first layer, you must choose a soft and fatty type of cheese with a short ripening period.
Mozzarella is an ideal choice for the first layer. Its delicate creamy taste will accentuate the shades of other filling products, and its fatty soft structure will improve the consistency of the dish. Instead of mozzarella, you can use feta cheese or Adyghe cheese, but the result will be, as they say, not for everybody. Cut the mozzarella into slices and place on a base greased with tomato sauce.
Cheese for the second layer
When the pizza base is filled with the filling, it’s time for the second cheese layer to form.It is best to use hard cheeses with a long ripening period. The classic version is Parmesan with its rich, dense flavor, rich in piquant nutty notes. However, you can use maasdam or another kind of Dutch cheese of your choice, English cheddar is fine too.
Grate the hard cheese on a medium to coarse grater and sprinkle liberally over the filling on top. When baking, it should melt and brown, but in no case dry out. If the oven does not heat well enough to quickly bake the crust, it is better to grate the smaller ones and put the cheese in the pizza just before the end of baking. In addition, you can lightly sprinkle the dough rim with finely grated Parmesan for a golden hue and mouth-watering crunchiness.
There is a regularity: the more time it takes to ripen the cheese, the less this product will be required to sprinkle the top layer. But in any case, the ripening period should not be less than six months. And, of course, you cannot use so-called cheese products for pizza, which contain vegetable fats – the result will not please you at all.
The best combinations of cheese and toppings
The taste of a dish directly depends on the varieties of cheese chosen for its preparation. So, if you are going to cook one of the classic Italian types of pizza, use mozzarella as the first layer and Parmesan for the second. This is a versatile combination that has been tested by time. But if you want to introduce other types of cheeses into the dish, you should keep in mind that they will not be able to show their best qualities with all types of fillings.
- Dutch cheese can be used both for topping and as a base, as its taste is fairly neutral. This is the best choice for pizza with only vegetables in the filling.
- Bryndza is used as a bottom layer, but one should not forget about its salty taste. For pizza, feta cheese is cut into thin strips or slices. It goes well with mushrooms and vegetables, moreover, it does not overload the filling with calories.
- Gorgonzolla is used to fill cheese pizza recipes. Its piquant taste is perfectly complemented by mozzarella, parmesan and emmental, which form a classic range of flavors.
- Emmental has a spicy expressive taste and best of all “plays” as a top layer of pizza with a delicate filling of chicken fillet, corn and pineapple.
- Dor Blue goes well with olives, sun-dried tomatoes and bell peppers.
- Yellow cheeses (cheddar, gouda, etc.) serve as an excellent background for flavorful ingredients – salami, smoked meats, ham with pineapple, as well as for “peasant” pizza with onions, pickles and sausages.
All of the listed varieties melt easily and stretch well, forming characteristic cheese strings when cutting the finished hot pizza into portions.
When choosing cheeses for pizza, you should strictly adhere to a simple rule: economy destroys taste. Low-cost varieties, when melted, form an elastic rubbery mass, quickly lose moisture and dry out without really melting. In addition, they contain too much salt, which negatively affects the final result.
To prepare pizza that will delight you and your loved ones with an appetizing look, bright taste and juicy, delicate texture, choose good quality cheeses. Focus on your taste preferences, but feel free to experiment. After trying several recipes, you are sure to find a combination of pizza cheeses that you like, look – meter pizza.
Cheddar Gorge, Somerset
Cheddar Gorge is a limestone canyon located near the village of the same name in Somerset, England. The gorge is famous for the fact that in 1903 the oldest fully preserved skeleton in Great Britain was found in its caves, about 9000 years old, nicknamed “The Cheddar Man”. Some remains found there are attributed to the Upper Late Paleolithic (12,000-13,000 years ago). In the caves formed by the activity of the underground river, stalactites and stalagmites of amazing beauty grow. The gorge is part of a site of special scientific interest called the Cheddar Complex.
Cheddar Gorge, including some of its caves, has become a popular tourist attraction. In a 2005 poll among Radio Times readers and later TV viewers of Seven Natural Wonders, it was named Britain’s second greatest natural wonder, second only to the Dan Ir Ogov cave complex. More than half a million tourists from all over the world visit it annually.
The depth of the gorge is 137 meters. It was formed by melting glaciers about 1.2 million years ago.years ago. The underground river Cheddar Yeo, which helped create the cave complex, is currently being used by the Bristol Water Company to fill the Cheddar Reservoir.
The two main caves open to the public are on the south side of the gorge and belong to the Longleat estate. The expansive Gough’s Cave and the narrower Cox’s Cave are named after their discoverers. There is a version that in the prehistoric period the caves served as a place for making cheese.Gough’s Cave, discovered between 1892 and 1898, is over 2 km long and 90 meters deep. For tourists, the exploration of the cave ends with the Diamond Chamber. The cave was equipped with electricity in 1899. Gough’s Cave is susceptible to flooding, but the water usually leaves within 48 hours. However, during the Great Flood of 1968, the water stood here for more than 3 days. Cox’s Cave was discovered a little earlier (in 1837) and consists of seven small grottos connected by narrow tunnels, underground lakes, and many complex stone and mineral formations. There is a version that in the distant past cannibals lived in these places – hence the many remains that were found in different parts of the caves.
Cliff Road (B3135), which runs through the 16-degree Cheddar Gorge, is a popular trail for cyclists. In 2011, the sixth stage of the Tour of Britain cycling race took place here. On the 27 cliffs of the gorge, there are about 350 officially permitted climbing routes, which are usually open between October 1 and March 15.Each of the routes has its own name and is included in the British Mountaineering Guide. The routes are divided into traditional and “sports”, depending on their complexity.
The Cheddar Man Museum is located in the gorge, which houses exhibits found in the caves. An audio guide (in English, German, French) is available for visitors to the caves, which tells in detail about the history of the gorge, its structure and people who lived here in ancient times. From Jacob’s Ladder, a hiking trail is laid along the surface, allowing you to enjoy the views of the gorge from a height of 140 meters. An open-top bus ride is possible along the gorge. There is also The Lookout Tower, which offers some of the most breathtaking views in the UK. Together with a visit to the gorge, you can plan a visit to the village of Cheddar, which is considered the birthplace of the famous British cheese.

Vallejo Egg Recipe
About Vallejo Eggs
Traditions of national Mexican cuisine go back more than a dozen centuries.Modern cuisine owes her the appearance in the arsenal of chili spices – an indispensable component of almost any Mexican dish.
We would like to offer you a recipe for a delicious and unique dish using this hot pepper – Vallejo style egg. Despite the presence of hot chili in the recipe, it will leave you with a lot of pleasant taste sensations.
Cooking time: 30 minutes
Ingredients for 3 servings:
- 6 chicken or turkey eggs;
- 6 fresh medium tomatoes;
- medium sized green chili pods;
- 2 large spoons of tomato paste;
- small onion head;
- butter for frying;
- hard cheese (preferably “cheddar”) 6 large spoons;
- some salt and pepper according to your taste;
- a pinch of coriander;
- 2-3 cloves of fresh garlic.
Cooking method:
We will cook the dish in a skillet with a thick bottom. Otherwise, scorching may occur at the last stage of cooking. It is necessary to prepare the components: peel the green chili pod of seeds (do not forget to wear rubber gloves, as the pepper burns very much) and cut into thin rings. Dip fresh tomatoes in boiling water for a couple of seconds, then remove the top layer. After peeling, cut the tomatoes into small pieces, add tomato paste diluted with water and prepared chili rings.
Cut the medium-sized onion into rings. Fry in butter until translucent. Place everything in a pan with fried onions. Stir slightly and simmer until medium soft. Season with salt, coriander and pepper to taste. Peel and crush the garlic cloves. Add to the prepared mixture and fry for a few more minutes under the lid.
Break four eggs into separate cups. In the stewed mixture in a skillet, make evenly holes for each egg and pour in one at a time, being careful not to damage the yolk.
Cover the pan with a lid until the egg whites thicken. After that, sprinkle eggs with cheddar cheese, previously grated on a fine grater. Cover the pan again until the cheese is melted into a smooth paste. Serve hot, garnished with fresh herbs such as parsley, dill or coriander.
This sumptuous yet easy-to-prepare dish can be served with a glass of red grape wine, highlighting the nuances of the national Mexican cuisine.

– Jamie Oliver Beer Pie –
Ingredients:
3 red onions
3 cloves of garlic
2 carrots
2 stalks of celery
4 mushrooms
Several sprigs of fresh rosemary
Olive oil
1 kg.beef brisket, cut into small cubes
440 ml. Guinness beer
2 tbsp with a heap of flour
150 gr. cheddar cheese
170 gr. puff pastry
1 large egg
Preparation:
Preheat oven to 190 ºC. Peel and chop onions, garlic, carrots and celery. Chop the mushrooms. Tear off the rosemary leaves and chop finely.
Heat some oil in a large, ovenproof saucepan over low heat, add onions and cook for about 10 minutes or until tender, stirring occasionally.Increase heat, add garlic, carrots, celery and mushrooms, mix everything. Then lay out the beef, rosemary. Season with a pinch of sea salt and 1 teaspoon of black pepper. Fry for 3 or 4 minutes, then pour in beer, add flour and stir. Pour in enough water to cover the meat and vegetables.
Bring to a boil, cover the pan and place in the oven for 2.5 hours or until the meat is very tender and the sauce thickens; stir after 1 hour and 15 minutes.
The ideal pie filling should not be runny, so if the filling runs out, place the saucepan on the stove and boil the sauce a little until it thickens.
Grate the cheese coarsely, stir half with the pie filling, transfer the filling to the dish and let cool slightly. Meanwhile, sprinkle flour on a clean work surface, divide the dough into two parts (1/3 of the dough and 2/3 of the dough). Roll out a larger roll as thick as a coin and a little larger than a saucepan. Grease the dish with butter and put the dough in it, leaving the edges hanging down. Place the filling on top of the dough and sprinkle with the remaining cheese. Cover the cake with the other part of the dough, pinch the edges and brush the cake with a beaten egg.Place the pie on the bottom of the oven and bake for 45 minutes until it is beautifully golden brown. Serve the pea pie.
